Lemon-mint Tea

Yields: 6 cups
6 cups of water
6 peppermint tea bags
1 small lemon
3 tablespoons sugar
- Boil water and then remove the water from heat.
- Add the peppermint tea bags and let steep for 5 minutes.
- Remove tea bags and add lemon and sugar.
- Serve hot or chilled.
Boiled Edamame Recipe

1 pound of fresh or frozen edamame in pods
2 tablespoons salt
- Wash edamame.
- Boil water in a large pot.
- Add 1 tablespoon of salt in the boiling water.
- Boil edamame in the salted water for 3 to 4 minutes.
- Drain the edamame and sprinkle 1 tablespoon of salt over them.
- Cool the edamame.
Wild Alaskan Smoked Salmon Sushi Roll

2 cups Japanese sushi rice
6 tablespoons rice wine vinegar
6 sheets nori (dry seaweed)
1 avocado, peeled, pitted and sliced
1 cucumber, peeled and sliced
8 ounces smoked salmon, cut into long strips
2 tablespoons wasabi paste
- Soak rice for 4 hours. Drain rice and cook in a rice cooker with 2 cups of water. Rice must be slightly dry, as vinegar will be added later.
- Immediately after rice is cooked, mix in 6 tablespoons rice vinegar to the hot rice. Spread rice on a plate until completely cool.
- Place 1 sheet of seaweed on bamboo mat, press a thin layer of cool rice on the seaweed. Leave at least 1/2-inch top and bottom edge of the seaweed uncovered. This is for easier sealing later. Dot some wasabi on the rice. Arrange cucumber, avocado and smoked salmon to the rice. Position them about 1 inch away from the bottom edge of the seaweed.
- Slightly wet the top edge of the seaweed. Roll from bottom to the top edge with the help of the bamboo mat tightly. Cut roll into 8 equal pieces and serve. Repeat for other rolls.
Imitation Crab Roll

4 cups sushi rice
4 sheets of nori (dried seaweed)
1 avocado
3/4 cup imitation crab meat
2 tablespoon mayonnaise
1/2 teaspoon salt
- Peel an avocado and cut it into strips or mash it.
- Put imitation crab in a bowl and mix with salt and mayonnaise.
- Cover a bamboo mat with plastic wrap.
- Put a sheet of dried seaweed on top of the mat.
- Spread sushi rice on top of the seaweed and press firmly.
- Sprinkle sesame seeds over the sushi rice.
- Turn the sushi layer over so that the seaweed is on top.
- Place avocado and crab lengthwise on the seaweed.
- Roll the bamboo mat forward, pressing the ingredients inside the cylinder-shaped sushi.
- Press firmly the bamboo mat with hands and remove the rolled sushi.
- Cut the sushi roll into bite-size pieces.
Green Tea Soy Ice Cream with Garnish
1 container of green tea soy ice cream
1 small container of thin mint cookies
1 small package of fresh mint
- Scoop out soy ice cream into appropriate containers.
- Garnish with fresh mint and a few cookies to make it a “fancy zeal.”
