Sweet Potato Bisque with Sunburst Hot Smoked Trout

4 Medium Sweet Potatoes
3-1/2 Cups Chicken or vegetable broth, or water
¼ Cup Honey
¼ cup fresh squeezed orange juice
1 cup half and half or heavy cream
Ground Cinnamon, Salt and Pepper to taste
1 piece of Portion Cut Sunburst Hot Smoked Trout
- Wash Sweet Potatoes and prick each potato a few times with a fork
- Bake sweet potatoes for approximately 45 minutes to an 1 hour (or until soft)in the middle
- Remove Potatoes from the oven to cool
- When Potatoes are cool, peel and mash the pulp
- Combine mashed sweet potatoes, broth, honey and orange juice in stock pot
- Bring to a simmer, stir with a whisk to prevent soup from sticking to Bottom of pot
- Finish with Half and Half
- Season with Cinnamon, Salt and Pepper to taste.
- Serve soup in warmed bowls and top with flaked smoked trout

Sunburst Trout Sausage Skewers with Cucumber Yogurt Sauce

For the Skewers:
8 oz. Sunburst Trout Sausage
16 6” Wooden or Bamboo Skewers
1 Tbl. Olive Oil
- Divide Sausage into 16 equal portions
- Mold sausage around end of skewer
- Heat sauté pan over medium heat and add oil
- Sauté Sausage skewers 3-5 minutes, turn skewers over once during cooking
Note: Skewers can be grilled and the size can be varied
For the Cucumber Yogurt Sauce:
2 Small cucumbers, peeled and seeded
8 Oz. Plain Yogurt
½ Tbl. chopped lemon grass
Salt and white pepper to taste
10” square of Cheese Cloth
- Grate or Puree Cucumber
- Place Pureed Cucumber in middle of Cheese cloth
- Gather ends of Cheese cloth around Cucumber
- Squeeze excess water out of Cucumber
- Combine Cucumber, Yogurt and lemon grass
- Season with Salt and Pepper

Sunburst Trout Skewers

4 Oz. Cold Smoked Trout
4 Oz. Hot Smoked Trout
8 Oz. Smoked Trout Dip
3-4 Stalks Celery washed and cut into about 3” lengths
1 Apple Washed and Diced
1 Pear Washed and Diced
1 to 2 portions String Cheese
Wooden or Bamboo Skewers
Toothpicks

Place Items on a plate and let your kids get creative.

Have them name their skewers and write down the names of the skewers.

Some of the names that my daughter and niece came up with include: fruit fish, the fruity fishy skewer, TV fish, TV fish with cheese and the trout snowman

Use any other type of fruit, vegetable, or any other ingredient that appeals to you.
